HOW TO MAKE BIRTHDAY CAKE COOKIES
TIP! Make ahead. Uncooked cookie dough has a refrigerated lifespan of 3 days in the fridge or 6 months in the freezer. Wrap tightly in saran wrap and store in a freezer bag.
Ingredients
- 1 cup unsalted butter softened
- 1/2 cup granulated cane sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon cake batter extract
- 2 3/4 cups flour
- 1/2 tsp sea salt
- 3/4 cup baking soda
- 1/2 cup rainbow sprinkles
Instructions
1. Preheat your oven to 350 degrees Fahrenheit line your cookie sheet with a silpat.
2. Add the butter and sugars to a large bowl and cream together with a mixer until a light and fluffy consistency forms.
3. Add the eggs, vanilla extract, and cake batter extract into the creamy mixture. Continue mixing until the combination turns light and fluffy, which takes around 1-2 minutes.
3. In a separate bowl, mix the flour, salt, and baking soda. Whisking ingredients together. Slowly add these dry ingredients into the butter mixture and stir until combined. Don’t overmix!
4. Gently fold in the sprinkles. Stir until they’re evenly distributed throughout the mixture.
5. Wrap the dough in cling wrap and chill in the refrigerator for a minimum of 1 hour. Don’t skip this step as tempting as it is!! The refrigeration period melds the flavors together and also results in a sturdier dough, making it easier to shape into balls and bake evenly.
6. After the dough is chilled, use a cookie scoop to scoop into 1.5-inch round balls.
7. Place the formed cookie dough balls on the prepared baking sheet and leave about 2 inches of space between the cookies.
8. Bake for approximately 10-12 minutes, or until you notice a light browning around the edges and across the tops of the cookies.
9. After baking, allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
These cookies are especially yummy warm out of the oven!
